Ingredients

  • pumpkin - about 2.2 lb (1 kg)
  • butter - 3.5 oz (100 g)
  • oil - 2 tbsp.
  • spring onions - 1 bunch
  • eggs - 4 pcs.
  • flour - 4 - 5 tbsp.
  • black pepper
  • dill
  • salt

How to make

Wash the pumpkin, clean it from its seeds and peel it. Cut it into about one finger thick slices (about 1 cm). Sprinkle the pieces with salt and set them aside to absorb the flavors for at least ten minutes.

In a large pan put the oil and butter to heat up. Roll the pumpkin pieces in the flour and fry them until they aquire a golden brown color on both sides.

Arrange them in a greased baking pan, season them with black pepper and salt, sprinkle them with the finely chopped bunch of spring onions and dill. Pour the beaten eggs on top of the pumpkin pieces and bake them in a preheated oven.
