How to make
Melt the butter in a deep frying pan and fry the onion in it until it softens. Turn off the hob. Sprinkle it with flour, then pour the broth inside. Turn on the stove and boil it, while stirring occasionally.
Add the rice and most of the mint (leave the other part for when you're serving the dish). Put the soup to boil on low heat for about 20 minutes. Season it with salt and black pepper.
Beat the yogurt and then pour it into the soup. Boil it a little more over low heat.
Then distribute the rice soup into portions. Sprinkle it with mint and serve it.
