How to make
Boil the potatoes until they're ready in salted water. Strain them, allow them to cool and peel them. Cut them into circles.
In a separate bowl, mix the pesto, dried tomatoes (pre-soaked in hot water and strained), chopped onions, salt and olive oil.
Mix everything well, pour it over the potatoes and leave them for 2 hours at room temperature under a lid to absorb the flavors.
