Ingredients

  • wholegrain spaghetti - 12 oz (350 g)
  • spinach - 7 oz (200 g)
  • garlic - 2 cloves
  • sundried tomatoes - 3.5 oz (100 g) marinated
  • dried dill - 2 pinches
  • dried oregano - 2 pinches
  • salt - to taste
  • olive oil - 1/5 cup (60 ml)
  • dried basil - 2 - 3 pinches + some fresh stalks for decoration
  • vegetable cream - 4/5 cup (170 g)

How to make

Chop the spinach and saute it with 4-5 tbsp of olive oil. Once softened add the finely shredded garlic, along with the dill and oregano. Cook for 2-3 minutes, until the herbs and garlic release their scents, and add the cream. Simmer until the sauce is reduced.

Cut the marinated sundried tomatoes finely and blend for a few seconds. Mix them with the dried basil and 2 tbsp of olive oil.

Once the sauces are ready you can prepare the spaghetti. Follow the instructions on the packet, strain and drizzle with olive oil to avoid them from sticking.

Serve immediately, by pouring the spinach sauce on top and finally the sundried tomato paste.

Garnish with leaves of fresh basil and serve hot.
