  • wholemeal spaghetti - 9 oz (250 g)
  • broccoli - 7 oz (200 g)
  • tuna - 7 oz (200 g) canned
  • olive oil - 3 - 4 tbsp.

  • cashews - 1 cup
  • olive oil - 4 tbsp.
  • garlic - 1 clove (optional)
  • lemon juice - 1/2 lemon

How to make

Boil the broccoli in slightly salted water for about 8-10 minutes, depending on whether you like them al dente or softer. Strain them well.

Add salt and sprinkle them with a little olive oil, so that they can absorb it while they're hot. Boil the spaghetti according to the manufacturer's instructions.

For the vegan mayonnaise, put the cashews, salt, olive oil and garlic in a blender. Blend everything at high speed until you have a smooth mixture.

Dilute it with lemon juice and more olive oil, if desired and blend for a while to homogenize everything.

Place the cooked spaghetti under running cold water to interrupt the cooking process. Strain and sprinkle them with olive oil and stir them lightly, so that it can spread everywhere.

Put the pasta in two separate plates, add the vegan mayonnaise on top (or the alternative - ordinary mayonnaise).

Strain the tuna from the liquid in the tin and add it on top, by sprinkling it with your fingers.

Finally, arrange the broccoli and serve the delicious healthy pasta.
