How to make
Blend the cooked squash.
Mix the flour and baking powder into a bowl. Make a hole in the middle and crack the egg in it. Stir and add the milk gradually.
Cut the butter into cubes and add it to the batter. Add the pureed squash. Stir well to a homogeneous mix. Cook the waffles in a waffle maker.
Season the sour cream with salt and black pepper. Add the lemon zest and finely chopped dill. Drizzle with olive oil and stir.
Chop the red onion and spring onions finely, to sprinkle on top of the waffles.
Serve the waffles by spreading the sour cream topping. Arrange the chopped smoked salmon and sprinkle with the red and spring onion.
