How to make
Dissolve the yeast in a little warm water with a little sugar and let it become effervescent in a warm place. Then sift the flour, add the yeast, eggs, lard and sugar. Knead a smooth dough.
Divide the dough into 4 balls and roll each one out into a circle. Cut each circle into 8 triangles. Prepare a stuffing by mixing your marmalade of choice with the chopped almonds, cinnamon and breadcrumbs. At the base of each triangle, put a bit of stuffing and form scones.
Arrange them on a tray with baking paper, coated with a little oil, egg yolk and leave them to rise. Place the scones with marmalade and almonds to bake in moderate oven until done.
