How to make
Heat the milk. Set aside 2/5 cup (100 ml) of it, put the yeast, a few tsp flour and 1 tsp sugar in it. Leave the resulting mixture for 10 min. to activate.
From the flour, 1 egg, 2 egg whites of the other 2 eggs, the oil, melted butter, sugar, 2 vanillas, the rest of the milk and already activated yeast, knead a soft and stretchy dough.
Leave it to rise about 40 min. Once risen, knead it again and divide it into 5 parts. Shape balls from it.
Leave them to rest for a few min. Roll out each ball into a circle, cut up each circle into 8 triangles. Put 1 tsp marmalade at the base of each triangle.
Lift the 2 vertices inward and roll up each triangle. Arrange the formed scones in an oven tray covered with baking paper. Let rise about 20 min. Smear them with the beaten egg yolks. Bake at 360°F (180 °C) for 25 min.
