Ingredients

  • chicken fillet - 2
  • olive oil - 2 tablespoons
  • eggs - 2
  • parmesan - 1.5 oz (50 g) grated
  • whole wheat flour - 2 tablespoons
  • breadcrumbs - 2 tablespoons
  • black pepper - to taste
  • peppers - 2, roasted, red
  • corn - 6 baby corn cobs, canned
  • carrots - 2 handfuls of mini carrots
  • broccoli - a few small florets
  • parsley
  • sesame seeds

How to make

Heat some olive oil in a pot and put all the vegetables to stew for a few minutes, season with a little soya sauce. Cut the chicken into medium size pieces and grill them for a bit in a pan. Season to taste with freshly ground black pepper.

Prepare a crumbing by beating the eggs with the whole wheat flour and parmesan cheese mixed with breadcrumbs. First, dip each piece of chicken in flour, then in egg and finally in the parmesan.

Fry the nuggets in heated olive oil for about 5 minutes on each side until golden. Serve the chicken pieces with steamed vegetables and top with parsley. Sprinkle some sesame seeds on top.
