How to make
Wash the salmon fillet and pat dry.
Cut the fillets into 1 inch squares. Drizzle with olive oil, and season with salt, pepper and orange juice. Let them marinate, while you prepare the vegetables.
Wash the and peel the onion, seed the peppers and cut them into one inch squares, as well. Clean the mushrooms and remove the stems. Season the vegetables with salt, basil, oregano, rosemary and a little olive oil.
Skewer the marinated salmon and vegetables in an alternating order. Place them in a baking tray and pour the orange juice marinade on top.
Preheat the oven to 360°F (180 degrees) and bake for around 20-30 minutes, until they are nicely grilled.
