  • eggplant - 1 pc. (large)
  • tomatoes - 1 pc.
  • white cheese - 1.8 oz (50 g)
  • yellow cheese - 1.8 oz (50 g)
  • eggs - 4 pcs.
  • oil
  • salt
  • dill - 2 stalks
  • oregano
  • garlic - 2 cloves
  • flour - 7 - 8 tbsp.

How to make

Peel an eggplant, cut it in half and then lenghtwise, in order to get nice slices.

Salt them and leave them for 30 minutes. Then wash the eggplant and dry it off from the water.

During this time, beat 2 eggs, add grated white cheese and yellow cheese, as well as chopped dill, mashed garlic and a little oregano. Mix everything.

Stew the eggplants in a little oil and then place them on kitchen paper so it can absorb the fat.

Cut the tomatoes into slices. Choose more or less identical slices of eggplant. On one half we put the egg mixture and on the other - a slice of tomato and connect them like a sandwich to each other.

Pour flour into a deep plate and beat the remaining eggs in a bowl.

Roll the eggplants in the flour, then dip them in the eggs and finally in the flour again.

Fry the breaded eggplants in hot oil.

Carefully bread all the pieces. Serve the chilled breaded eggplant sandwiches.
