How to make
The eggplants are washed and cut into circles.
The eggplant slices are salted and left to drain.
In a bowl, mix the cornflour, breadcrumbs and all of the other spices.
In another bowl, beat the eggs.
The baking tray in which the eggplants will be baked is covered with baking paper.
Each slice is first dipped in an egg and then very well rolled in the dry ingredients.
Sprinkle the breaded eggplants with a little olive oil.
Bake the crispy breaded eggplants in the oven at 360°F (180 degrees).
