How to make
Mix all spices to taste with most of the olive oil and using the brush, smear the loins, which you have pre-salted. Allow to stand covered in a greased pan for 2 hours.
Then mix the remaining olive oil, honey, mustard, wine and soya sauce, whipping with a whisk. Carefully and evenly pour it over the meat, cover it with foil and put it to bake for 2 hours in a moderate oven.
Serve the pork loin portions, with a little of the sauce from the pan.
