Ingredients

  • rabbit - 1 pc.
  • rice - 1 1/2 cups
  • spring onion - 1 stalk
  • vegetable seasoning - 1 tsp.
  • paprika - 1 tsp.
  • black pepper - a pinch
  • dried mint - 1 tsp. (or fresh)
  • butter - 1.8 oz (50 g)
  • oil - 3 1/3 tbsp (50 ml)

How to make

Cut the rabbit into portions, wash it well and rub it with salt and paprika.

Cut the onions and fresh mint - if you are using that, if not, dry mint is also good. Season with a little salt, paprika and black pepper, stir and add the portions of meat.

Add 3 cups of water, cover it with aluminum foil and place it in the oven to simmer for about an hour, an hour and a half.

Take out the roasted rabbit and add the rice, cover it once again with foil and leave it in until the rice is fully cooked.

Before you turn off the oven, remove the foil, to bake the meat for a short while, but without drying it out, in order for it to stay juicy.

The roasted rabbit is ready.
