Ingredients

  • cherry tomatoes - 7 oz (200 g)
  • cucumbers - 2 pcs.
  • peppers - 1 pc.
  • zucchini - 1 pc.
  • spring onion - one bunch
  • kalamata olives - 3.5 oz (100 g)
  • feta cheese - 5.3 oz (150 g)
  • spinach
  • arugula
  • olive oil
  • oregano
  • balsamic vinegar
  • salt

How to make

Slice the zucchini into rounds, drizzle with some olive oil and grill it on a hot grilling pan.

In the meantime, chop the cucumbers, and mix with the cherry tomatoes, chopped peppers, onion, spinach and arugula.

Add the zucchini slices and olives. Season the salad with olive oil, balsamic vinegar and salt.

Arrange the Feta cheese on top along with a few more olives, sprinkle with oregano and serve.
