Ingredients

  • quinoa - 4.2 oz (120 g)
  • mussels - 6 - 8 pcs.
  • shrimp - 6 - 8 pcs. (or other seafood by choice)
  • chicken broth - 1 cup (or vegetable broth)
  • boiled chicken - 1.7 oz (50 g)
  • fresh tomatoes - 2 pcs.
  • onions - 1/2 onion (ripe)
  • white wine - 1/2 cup
  • garlic - 3 - 4 cloves
  • black pepper
  • salt
  • frozen peas - 1.7 oz (50 g)
  • red peppers - 1 pc.
  • olive oil - 2 tbsp. (if you're not using chicken broth, double the amount of olive oil)

How to make

First, wash the quinoa a few times. This is an important step before we start cooking.

Start preparing by steaming the onions in olive oil for 2 minutes along with the black pepper, the diced red pepper and garlic.

Next step - add the finely chopped tomatoes, pour the wine, chicken broth, add the quinoa, peas and parsley.

Stew under a lid for about 15 minutes or until the water has almost evaporated.

Once the liquid has evaporated a little and the quinoa is cooked, add the shrimp, mussels, boiled chicken and put the lid back on and stew for about 10 minutes.

If the seafood is frozen, leave it for 10 minutes, if it is fresh - 5 minutes.
