How to make
Cut the bacon into strips with a thickness of about 2″ (5 cm) and length of 6″ (15 cm). Place them in water to soak well for 3 days, changing the water every day. Then take 3 jars and stuff pieces of bacon in them.
It is important for the jars to be very tightly stuffed. Between the bacon, put peppercorns and 2 bay leaves. Make a marinade of 3 jars of water and 1 jar of sea salt (3 1/3 cups (800 g)). Put it on the stove and stir until the salt melts.
Allow the marinade to cool, then put it in the jars. Close them with caps and turn them upside down in a cool, dark room for 1 day.
