Ingredients

  • peppers - 2 lb (1 kg) roasted
  • tomatoes - 5
  • onions - 3 heads
  • eggs - 4
  • feta cheese - 7 oz (200 g)
  • parsley - 1 bunch
  • black pepper
  • salt - to taste
  • oil - 1/2 cup

How to make

Stew the finely chopped onion in the oil, add the chopped roasted peppers, salt and finally the grated tomatoes.

Stew until the sauce thickens. Add crumbled feta cheese, beaten eggs, black pepper and chopped parsley. Stir until the eggs tighten.
