Mix the wine, black pepper, crushed cloves, marjoram, crushed bay leaf and cinnamon. Let the ribs soak in this mixture for 1 hour, occasionally rolling them in it.
In a tray, finely chop the onion, peeled tomatoes, apples and parsnips. Arrange the ribs on top and add a glass of olive oil and a bit of the marinade.
Initially, roast the ribs covered with foil for about 2 1/2 hours, occasionally turning them.
