Ingredients

  • coconut flour - 2.1 oz (60 g)
  • spelt milk - 1 cup (250 ml)
  • spelt flour - 0.7 oz (20 g)
  • hemp flour - 1 tbsp.
  • flaxseed flour - 1 tbsp.
  • olive oil - for frying
  • walnuts - a few for sprinkling
  • honey - 2 - 3 tbsp.
  • frozen cranberries - 2 - 3 tbsp.
  • coconut shavings - 1 tsp. for sprinkling

How to make

Put all the different types of flour and milk in a deep bowl and stir with a fork until you get a thick mixture.

Heat a non-stick frying pan over medium heat, grease with a little olive oil and pour some of the mixture.

Fry each one of the coconut pancakes for 2-3 minutes on each side.

Place them on top of each other and drizzle the honey over them and sprinkle with fruit and nuts.

I advise that you do not to make the pancakes too big, because the mixture differs from the usual pancake mixture because of the coconut flour and the way it absorbs liquids.

If you make your vegan coconut pancakes too big, there is a chance they will break when being turned over.
