Ingredients

  • eggplant - 3 pcs, medium sized
  • red peppers - 4 pcs.
  • tomatoes - 1 large
  • red onions - 1 pc.
  • garlic - 3 cloves
  • olive oil - 2 tbsp.
  • vinegar - 1 - 2 tbsp.
  • salt
  • parsley
  • feta cheese - 3.5 oz (100 g)

How to make

Grill the eggplant and peppers whole. Peel them and clean them carefuly.

Chop them in a bowl and add the chopped onion, garlic, tomato, and parsley.

Season with salt, olive oil, vinegar and mix all the ingredients together.

Serve with grated feta cheese.
