"The day smells of Christmas with apple and pumpkin cake. Add a cup of hot tea for your own pleasure."

Ingredients

  • apples - 1.1 lb (500 g)
  • raw pumpkin - 1.1 lb (500 g)
  • wheat semolina - 1 cup
  • flour - 1 cup
  • sugar - 1/2 cup
  • honey - 4 tbsp.
  • walnuts - 1/2 - 1 cup, crushed
  • baking powder - 1/2 - 1 sachet
  • cinnamon - 1 - 2 tsp.
  • oil - 3 tbsp.

How to make

Peel the apples and grate them. The pumpkin is cut, peeled and grated. Mix and add cinnamon to them. Add honey and oil as well. Everything is mixed together.

In another bowl, add the flour, sugar, semolina and baking powder and mix. You can add some walnuts.

A baking tray or a cake tin is lined with baking paper, which is lightly greased with oil. Start arranging the fruit cake by pouring half of the dry mixture first (if the baking paper is completely dry, part of the flour below will not stick with the rest of the cake), then half of the fruit, the rest of the dry mixture on top and finally add the rest of the fruit. Sprinkle with crushed walnuts on top.

Bake the lean cake in a preheated oven at 340°F (170 degrees) for about 40 minutes or until ready.

When serving, the Christmas cake with apples and pumpkin, it can be sprinkled with powdered sugar.
