How to make
Mix 4/5 cup (200 g) of flour and the butter (at room temperature) that has been cut into pieces. Add salt and water to get a soft dough and let it stand in a cool place for at least 1 hour.
Meanwhile prepare the filling: to the cottage cheese, add sugar, egg, the remaining flour, orange and lemon zest, saffron and salt to taste. Roll out the dough into a sheet with a thickness of an inch or 2. Cut out circles with a diameter of about 2 3/4″ (7 cm) using a suitable shape.
In the middle, put a spoon of stuffing and shape the sides with your fingers, so you get a nest. After baking, if desired, you can sprinkle them with powdered sugar.
