Ingredients

  • starch - 4.2 oz (120 g) corn, natural
  • water - 12.5 fl oz (370 ml)
  • orange juice - 5.8 fl oz (170 ml) freshly squeezed
  • lemon juice - 2 - 3 tbsp.
  • citric acid - 1/4 tsp.
  • confectionery paint (green, yellow or orange)
  • crystal sugar - 9.5 oz (270 g)
  • powdered sugar - about 9 oz (250 g)
  • oil - 1 tbsp. for greasing the baking pan

How to make

Mix 1 cup (250 ml) of the water with the starch, citric acid and orange juice into a bowl (strained, so that there are no citrus particles in it and it is perfectly clear). Beat well so that there are no lumps.

Put the remaining water with the lemon juice and sugar on the stove and boil for 3 minutes on moderate heat, by stirring occasionally.

Pour the starch to the sugar syrup and boil for 5 minutes, without stopping to stir and beat with a wire whisk. Add confectionery paint and color it to whatever intensity you like.

As soon as the mixture thickens, pour it into a greased baking pan in a layer, which is about 0.6″ (1.5 cm) thick (can be in two separate molds, if you like). Flatten it quickly, because it sets in an instant.

When the homemade Turkish delight has cooled, refrigerate it for 4 hours, by covering the baking pan with cling film.

Remove it from the mold and turn it over onto a cutting board. Cut the Turkish delight into cubes and roll them in powdered sugar.

Refrigerate them in a tightly closed container, until it's time to serve them. If the powdered sugar gets wet for some reason, add more powdered sugar to the Turkish delights again before serving. Then enjoy this classic recipe from the Turkish cuisine!
