How to make
Clean the peppers and cut them into small pieces. Cut the tomatoes into cubes. Grate a carrot.
Heat olive oil at a moderate temperature in a pan on the stove and fry the peppers and carrots until soft or about 10 minutes. Add the chopped tomatoes and cook for another 5 minutes. Season with salt and pepper.
Remove from the heat and allow the mixture to cool slightly. Add the mozzarella, finely chopped, and mix well. Cut the mini baguettes in half without separating the two halves and spread them with ketchup.
Fill them with the mixture of vegetables and mozzarella. Sprinkle with grated cheddar. Bake in a preheated oven at 360°F (180 degrees) until the cheddar melts for about 5 minutes. Remove and decorate with mustard on top.
