Ingredients

  • rice - 7 oz (200 g)
  • parmesan cheese - 1 cup grated
  • eggs - 4
  • breadcrumbs
  • salt - to taste
  • mozzarella - 4.4 oz (125 g)
  • oil - for deepfrying

How to make

Rinse and cook the rice. Strain the left over water, if any. Let the rice cool.

Season with salt and add two eggs. Mix well and add the grated parmesan cheese.

Heat the oil in a deep frying pan at moderate temperature.

Make small balls with the rice mix. Stuff each ball with a piece of mozzarella cheese.

Beat the other two eggs in a bowl. Dip each rice ball in the eggs and then roll them in the breadcrumbs.

Deepfry the rice paties until they turn golden brown. Place them on a piece of kitchen paper to absorb the excess oil.

Serve the Arancini warm, with a salad of your preference.

The Sicilian-style Arancini are ready.
