  • new potatoes - 2.2 lb (1 kg)
  • garlic - 2 - 3 cloves
  • rosemary - 1 tsp.
  • oil - 4 - 5 tbsp.

How to make

Choose new potatoes of the same size (medium) and wash them very well, because they will be cooked with their skin. Cut the potatoes in half and boil them in salted water for 10 minutes. After boiling for 10 minutes, take them out and strain to drain all the excess water.

Transfer the potatoes to a large bowl. Finely chop the garlic cloves and rosemary.

Pour the oil into a pan and fry the garlic and rosemary until browned. Allow the oil with the spices to cool slightly and strain it through a fine sieve. Pour the still warm oil over the potatoes in the bowl, adding salt, black pepper, and a little hot red pepper. Mix the potatoes very well until they absorb all the oil.

It is good for both the oil and the potatoes to be warm the moment you mix them, so while cooking the potatoes, you can make your aromatic oil. When the potatoes absorb the oil, arrange them in a baking tray, in which you put baking paper.

Bake the potatoes at 390°F (200 degrees) for 60 minutes, turning the potatoes on the other side after the first 30 minutes.

There is another option - instead of baking them in the oven, you can fry them.

For this purpose, you leave some of the aromatic oil, which will be used for frying. Fry the potatoes on medium heat for about 15-20 minutes, turning every 5 minutes.

The fragrant crispy new potatoes become amazing - crispy on the outside and creamy on the inside.
