How to make
Pre-cook the rice for about 20 minutes. It should not be fully cooked.
Drain and allow it to cool. Boil the chicken and cut it into small pieces. Heat the oil in a deep frying pan and crack two eggs into it and stir until they're fried and scrambled.
Add the vegetables and fry them, while stirring occasionally for about 10 minutes. Add the chicken and rice and mix well.
Cook for another 10 minutes and add the soy sauce, season with salt, but do not overdo it as the soy sauce is salty enough.
After about 5 minutes, remove from the heat. Serve garnished with spring onions, cut into rhombuses.
