"Did you know you can knead this universal dough for mekitsi and pitas the night before and use it the next morning?"

Ingredients

  • flour - 2.5 lb (1.2 kg)
  • yoghurt - 2 cups (500 g)
  • yeast - 1 1/3 tbsp (20 g) baker's, or 1/2 packet of dry yeast
  • salt - 1 tsp
  • sugar - 1 tsp
  • baking soda - 1 tsp
  • milk - 4/5 cup (200 ml)
  • oil - 1 tbsp

How to make

Mix the yeast with the sugar and add the yoghurt and baking soda, milk, oil, salt and flour. Gradually, knead a dough which needs to be smooth, elastic and slightly sticky.

You can store this dough for up to 1 week in the refrigerator in a plastic bag. With this dough, you can prepare mekitsi, as well as pitas or pizza crusts.
