Ingredients

  • tomatoes - 14 oz (400 g) finely chopped
  • tomato paste - 1 cup (230 g)
  • stock - 2 tsp veg
  • onions - 1 head red, chopped
  • carrots - 4 finely chopped
  • peppers - 2 pieces
  • zucchini - 1, cubed
  • corn - 1 can of canned
  • green beans - 2 oz (50 g) finely chopped
  • basil - fresh, finely chopped
  • water - 1 1/5 cups (300 ml) boiling
  • celery - sprig decoration
  • yogurt - 1 tablespoon

How to make

Place the pan on the stove and put in medium cut tomatoes, tomato puree and vegetable broth. Then add chopped onions, zucchini, carrots, peppers.

Pour boiling water and let simmer for 15 minutes. Add the corn and beans and bring to a boil for 5 more minutes. Season with salt, pepper and fresh basil.

Serve this vegetable soup with a spoon of yogurt and a celery stalk in it.
