"A meatless potato stew that always makes us drool!"

Ingredients

  • potatoes - 28 oz (800 g)
  • onions - 2 heads, medium
  • peppers - 2 red + 1 green
  • tomato paste - 2 tbsp
  • parsley - 1/2 bunch
  • paprika - 1 tsp
  • flour - 2 tbsp
  • vinegar - 1 tsp
  • sugar - 1 pinch
  • black pepper
  • salt
  • oil
  • savory

How to make

Peel and cut the potatoes into coarse chunks. Rinse them and put them to boil until semi-done in salted water. In a deep pot, sauté the chopped onion and once soft, add the chopped peppers.

Sauté with a lid on, stirring often. When the peppers become soft, add the flour, stir and pour the tomato paste in with one quart of hot water. Allow to simmer for a while and add a pinch of sugar, savory, black pepper and paprika and a teaspoon of vinegar.

After them, add potatoes. Leave the potato stew to boil for about 10-15 minutes. Sprinkle with chopped parsley and remove from the fire.
