"Close your eyes and try this salad - its taste and aroma will take you straight under the thick shade of an olive tree, its leaves rustling from the sea breeze."

Ingredients

  • penne - 14 oz (400 g)
  • cherry tomatoes - 10.5 oz (300 g)
  • cucumbers - 1.
  • onions - 1 head shallots
  • olives - 5.5 oz (150 g)
  • arugula - 2.5 oz (75 g)
  • sheep cheese - 7 oz (200 g)
  • balsamic vinegar - to taste
  • mustard - 1 tsp
  • salt
  • black pepper
  • oregano - 1/2 tsp dried
  • sugar - 1 pinch
  • olive oil - 4 tablespoons

How to make

Cook the pasta in boiling salted water for 11 minutes, then drain them and mix them with a tablespoon of olive oil. Clean all the vegetables. Cut the tomatoes in half, cucumbers - in rings, onion - thin crescents and olives - chop, if large.

Combine the vinegar, mustard, salt, black pepper, sugar, oregano and mix them well with olive oil. Pour the marinade and mix it with the noodles, vegetables and cubes of sheep cheese (maybe mozzarella ).
