Ingredients

  • leeks - 1 large sprig
  • potatoes - 2 medium
  • carrots - 2 - 3
  • peppers - 2 - 3 red and green
  • tomatoes - 2 medium
  • green beans - 1 handful
  • oil - 1/3 cup (80 ml)
  • salt
  • black pepper
  • oregano - to taste, dried
  • cheese - 7 oz (200 g) grated
  • eggs - 2 - 3

How to make

Clean all the vegetables and cut them. Finely fry the crushed leeks and carrots. Add sliced potatoes and cook with them briefly. Blanch the green beans in boiling water, but you can use canned ones too.

Combine all the vegetables in a greased oven dish and season them with spices. Generously pour oil and put to bake in a moderately hot oven for about 25 minutes. Verify that the potatoes are tender.

If they are, pour in the eggs, beaten well with a pinch of salt and mixed with grated cheese. Put the vegetables in the oven until lightly browned.
