How to make
Roll out the puff pastry on a lightly floured surface. Cut out an even number of circles. In the middle of half of them put 1 tablespoon each of the finely chopped 4 hard boiled eggs.
Season to taste with salt and black pepper. Cover with the remaining slices and press the edges lightly. Arrange the mini pies on a tray.
Spread the top with beaten egg. Bake in a preheated 390°F (200 °C) oven for about 20 minutes.
