How to make
Rub the trout fillets with the spices for fish. Stir in 1 tablespoon rice flour, corn flour, breadcrumbs and black pepper, paprika, salt and grated Parmesan.
Stir the mixture and roll the trout fillets in it. Heat the butter and olive oil with the rosemary sprig in the frying pan.
Put the fish fillets in to fry first on the side with the skin and then turn them over.
Fry for about 2 minutes on each side. Serve with thick slices of lemon.
