Ingredients: 1 whole chicken, 2 tbsp butter, the juice of 1 lemon, 3 1/5 cups high quality white wine, 1 onion head, 3 garlic cloves, 2/5 cup cognac, salt and black pepper to taste, several bunches of fresh coriander.

Preparation: Wash the chicken well, drain it and rub it with salt. Make a mixture of the lemon juice and melted butter, smear the chicken with it. Put the onion in it, without cutting it. Put the chicken to boil whole in the wine. Once it's ready, cut it, strain the broth it boiled in and to it add the peeled and coarsely chopped garlic cloves, as well as the finely chopped coriander and cognac.

Once the sauce thickens, add a little salt and black pepper to taste. Pour this hot alcoholic sauce over the portions of chicken and serve. For decoration, you can add bunches of fresh coriander to each plate and vegetables of your choice as a garnish.

Apricot Dessert

Chilean Dessert with Dried Apricots

Ingredients: 2 cups dried apricots, 2 cups of corn porridge, made from corn flour and water, 1 2/5 cups sugar, 3 tbsp gelatin, 2 cups cream.

Preparation: Pour cold water over the apricots and leave them to sit that way for 30 hours, then put them to boil along with the sugar. Once they soften fully, take them out, drain them from the water and cut them into cubes.

Dissolve the gelatin in a water bath, beat the cream with a mixer and make the corn porridge. Distribute porridge and fruits into dessert bowls or cups, with equal amounts of gelatin and cream at the very top. Save a few of the apricot cubes to decorate on top.

Another option is to use a fruit syrup, grated chocolate or ice cream. But don't forget that before serving the exotic fruit dessert you need to leave it to cool for about 5 hours in the fridge.
