It's well known that the Western diet essentially has a love affair with meat and meat specialties. Pork, chicken and beef, and especially juicy steaks, are highly favored.
But no matter if prepared from pork, chicken or beef, whether cooked on the grill, fried or breaded, they invariably find presence at the dining table. Which is a great reason to learn how to make them. Here are a few slightly more unusual variations:
Pork Chops with Milk Sauce
Ingredients: 21 oz pork chops, 3 carrots, 2 onion hands, 4 parsley roots, 3 tbsp flour, 1 cup milk, 2 egg yolks, 1 lemon, 4 tsp oil, salt and black pepper to taste.
Preparation: Put the pork chops in enough water and bring them to a boil. After removing the foam that forms, salt them and add the roots of parsley. 30 min. before the dish is ready, add the sliced onions and carrots. Boil until the products are completely ready, then take them out and strain the broth.
Braise the flour in the oil and to it add the milk, broth and several slices of lemon. Once the sauce begins to thicken, remove it from the stove and add the whipped egg yolks to it. Season with salt and black pepper and serve the chops with the milk sauce poured over them.
Marinated Veal Steak
Ingredients: 16 oz veal steak, 3 1/3 tbsp olive oil, 3 1/3 tbsp lemon juice, 3 tbsp soya sauce, 1 tbsp honey, 2 crushed garlic cloves, salt and black pepper to taste.
Preparation: Rub the steak with black pepper and salt it, but not too much. Mix all of the remaining ingredients in a bowl and pour them over the steak, leave it to marinade for at least 5 hours, basting it periodically with the marinade during that time. Once ready, roast on a grill or barbecue on both sides, while continuing to baste with the sauce. Serve with sauteed vegetables or with rice.
Crumbed Chicken Steak with Curry
Ingredients: 4 chicken steaks, 1/3 cup flour, 2 tsp salt, 1 tsp black pepper, 3 1/3 tbsp butter, 1/5 cup olive oil, 1 finely chopped onion head, 1 tsp curry, 2 tbsp ketchup, 1 tbsp lemon juice, 1 1/5 cups vegetable broth, 1/5 cup orange jam.
Preparation: Mix the flour with the salt and pepper and roll the chicken steaks in it. Braise them on both sides in the butter, then put them for 15 min. in a preheated 410°F (210 °C) oven. In the meantime, saute the onion in the oil, add the remaining flour and all the remaining products. Boil this sauce for 15-20 min. and pour it over the prepared chicken steaks.
