Characteristics of chanterelles
Unlike many other mushrooms, the flesh of the chanterelle is much firmer and its cooking time is longer.
You can get dried, frozen or fresh chanterelles, the latter being recommended because they are quite susceptible to storage and can easily stay in the refrigerator for about 10 days.
For dried chanterelle mushrooms it is essential that before you cook anything with them, it is important to soak them in cold water for about an hour so that they can regain their original shape. Frozen chanterelle mushrooms are available pre-blanched, and if you cook with raw mushrooms, they must be well cleaned and take into account that if you are going to boil them, this will take about 30-40 minutes. It all depends on the size of the mushrooms themselves. In case you cut them into pieces (sometimes you can come across huge chanterelle mushrooms), the cooking time will quite logically decrease.
With chanterelle mushrooms you can prepare practically any dish, because they go great not only with rice, but also with meat, eggs and cheese. You can even dry them yourself or marinate them and seal them in jars.
Ideas for what you can cook with chanterelles

Soups
With chanterelles you can cook any traditional mushroom soups and broths by adding onions, carrots, potatoes, rice or vermicelli. We remind you that the cooking time of the mushrooms is much longer compared to that of ordinary mushrooms. Chanterelle cream soup is also very tasty, and there are many recipes that also include pumpkin and cream.
Breaded chanterelles
Like parasol mushrooms, chanterelle mushrooms are very tasty breaded. They are breaded in the usual way with flour and egg, which are mixed in a bowl together with a little salt, the mushrooms are dipped and fried in deep-heated oil. If you want the breading on the chanterelles to be fluffier, add a little baking powder.
Stewed chanterelles
This is probably the classic among all chanterelle recipes. Stew the mushrooms in butter, add salt to taste and once they are done, take them out, arrange them on a plate and sprinkle with black pepper, finely chopped dill and garlic. They are most delicious while they are still warm.
Chanterelle salad
To prepare a cold chanterelle salad, the mushrooms must be boiled and strained beforehand. They go wonderfully with boiled potatoes, spring onion sprigs, olives, garlic, dill and other spices of your choice.
