The vegetables are cleaned and cut into thin slices. The tomatoes are scalded with boiling water and peeled, they are cut into thin slices or diced.

The chopped vegetables are flavored with finely chopped garlic, mixed with spices, lemon juice and olive oil. Leave them to cool for 1 hour in the fridge and serve.

To prepare a blue cheese artichoke omelette, you need 1 artichoke, 1 egg, 125 grams of blue cheese, 15 grams of butter, 1 tablespoon of lemon juice, black pepper and green spices to taste.

The artichoke is cleaned and boiled in water with added lemon juice to prevent it from darkening. Cut the cooked artichoke into thin pieces and place it in a baking pan greased with butter.

Add two-thirds of the blue cheese on top, broken into pieces. Melt the rest of the butter from greasing the baking pan and fry the egg.

The fried egg is placed on top of the blue cheese, and the rest of the cheese is spread over the egg white, without covering the yolk.

Bake uncovered in an oven heated to 180°C for 6 minutes. The dish is served hot and sprinkled with black pepper and green spices.
