You can make your own filo pastry crusts yourself instead of using store bought ones. It will take a long time, but the result is worth it - you will enjoy a crispy delicious filo pastry that melts in your mouth.

Filo pastry crusts are made from 800 grams of white flour, 2 cups (500 ml) of water, two pinches of salt and two teaspoons of vinegar. To make good crusts, the flour must be sifted through a sieve once or twice.

Then a well is formed in the flour, where the salt and vinegar are added and then the water is added a little at a time. The liquid is added to make a soft and elastic dough.

Add a little flour and mix very well. The actual kneading takes at least twenty minutes and that way you will get the best result.

Slam the dough on the table a few times to remove excess air. Then shape something like a salami and cut it into pieces of about ten centimeters.

Shape each piece into a ball. Roll out the balls using a rolling pin. If you do not intend to make pulled crusts, roll out the crusts, until they are very thin but without holes.

If you have decided to make crusts as our grandmothers used to do, roll out the dough very lightly, brush it with a little oil, so that the crusts do not stick together and leave them rest for half an hour.

Pulling the crusts is a very difficult process for those who are impatient. The rolled out crust is placed on fisted hands and they are stretched out to the sides. You can pull the edges of the crust or gently throw it in the air. But only master bakers do it in the air.

You can remove the crusts by placing them one at a time on a cloth and gently pulling the edges on all sides outwards. The crusts thus prepared are smeared with melted butter and filled with stuffing. The crust is rolled and then shaped into a spiral in the baking pan.

After filling the next crust, continue to form the spiral with its help. Spray with a little oil or melted butter and bake in an oven preheated to 390°F (200°C).
