To freeze strawberries, you need to follow some simple rules. Always choose healthy and well-ripened strawberries, but not too ripe. Then wash and clean them very well. After that, it is good to decide what you will use the strawberries for and distribute them in bags.
The strawberries, which will be intended for direct consumption are dried very well and distributed in polyethylene bags. The air is removed from the bags and they are frozen. Frozen strawberries are defrosted by first placing them in the refrigerator and then leaving them at room temperature.
If desired, even before putting them in the bags, you can sprinkle them with sugar. If the frozen strawberries will be used as a filling for pastries, they must be frozen without sugar. When they are going to be used, they are partially defrosted and rolled in flour or breadcrumbs before being mixed into the batter. That way they won't fall to the bottom of the cake.
The strawberries that will be used for decorating cakes and pastries are arranged on a tray and left in the freezer until frozen. Then put them in bags and put them in the freezer.
As you can see, strawberries are frozen very easily and their shelf life is 8-10 months. That way you will have strawberries at any time of the year, which can be used both for direct consumption and for pastries, fillings and decorations.
