To make a delicious fried rice, you will need to do the following:
Use cold, pre-cooked rice. You have to plan and use a well chilled boiled rice. A fresh batch of warm rice will be of no good, because once you decide to pan fry it , it will stick together and become lumpy. If you still don't have cold, cooked rice, let the freshly cooked rice cool to room temperature and then spread the rice on a tray and cover it with foil. Put in the fridge for about an hour.
Use butter when cooking. Add vegetables - they add a lot to the flavor and freshness to the fried rice. You can add both white and spring onions.
Cook over high heat. This will help to fry and brown the rice and vegetables well and also help prevent the rice from stewing in the pan. Fry the rice for about 4-5 minutes, until it aquires a golden color and stir every 15-20 seconds with a wooden spatula to prevent burning. Use a non-stick pan to prevent the rice from sticking to the bottom of the pan.
Add some soy sauce at the end.
