How to make
Pork tenderloin is cut up into thin strips, crushed garlic, lemon rind, sugar, salt and half the peanut oil, mix them well into a large bowl. Cover with a lid and put in the fridge for 10 minutes, cut the asparagus in half and boil until tender.
Rinse with cold water and strain. The remaining peanut oil is heated in a large skillet. The sliced onion and grated ginger are fried quickly until onions soften, and remove from the pan.
The pork is placed in the same pan and fried quickly in batches until golden. All the meat is put back in the pan with the onion mixture, chopped tomatoes into slices, asparagus, and peanuts.
Fry quickly until it becomes a homogeneous mixture. The dish is served, sprinkled with parsley.
