Ingredients

  • oil - 1/2 cup
  • flour - about 2 lb (1 kg)
  • eggs - 4
  • salt - 1 tablespoon
  • sugar - 1 tablespoon
  • yeast - 1 packet (dry)
  • water - 1 2/3 cups (400 ml) cool (or milk)
  • baking soda - 1/4 tsp
  • butter - 2/5 cup (100 g)
  • feta cheese - 5.5 oz (150 g)

How to make

Dissolve the yeast in the cool water with the sugar. After it effervesces, add it to the well of sifted flour. Add the eggs, oil, salt, baking soda and knead a smooth dough.

While kneading, add a little of the melted butter. Leave it to rise. Divide the dough into balls, roll out each into 5/64 (2 mm) thick, sprinkle with feta cheese and roll them up into spirals.

Arrange them in a tray with baking paper and leave to rise about 20 min. Smear with egg yolk and bake until ready in a moderately heated oven.
