"That`s the one thing we love about pitas - they`re suitable for breakfast, as well as a substitute for bread at lunch or dinner. Or, you can just eat them as is!"

Ingredients

  • white flour - 1 1/5 cups (300 g)
  • whole wheat flour - 1 cup (250 g)
  • corn flour - 2/5 cup (100 g)
  • water - 4/5 cup (200 ml), hot
  • yoghurt - 2/3 cup (150 ml)
  • oil - 4 tablespoons
  • yeast - 1 1/3 tbsp (20 g) , baker's
  • salt - 1 1/2 tsp
  • sugar - 1 tsp
  • for the filling
  • cheese - optional
  • feta cheese
  • for spreading
  • butter

How to make

Dissolve the yeast in warm water with a little sugar, until it is activated. Together with the flour, yeast, yoghurt, oil, remaining sugar and salt, knead an elastic dough. Allow to rise covered with a towel for about 40 minutes. Then knead it and shape it into 12 equal balls.

Each ball is rolled out thinly on a surface coated with oil. Put a little crumbled feta cheese in the middle, and optionally add the grated cheese. Fold and roll them again with the filling until they thin out.

Bake all of them in a hot, dry, non-stick frying pan. The finished pitas with feta cheese are topped immediately with a little butter.
