How to make
Put 1 1/5 cups (300 ml) of milk to heat and mix it with the sugar. Meanwhile, beat the yolks of the eggs well and add the flour, cold milk and vanilla.
Trickle in the warm milk, while constantly beating with a mixer. Stir the cream to cool it slightly and add the baking powder. Cover with foil and put it in the refrigerator to cool completely.
Then, beat the yolks into hard snow and gently mix them with the cold cream. Distribute the sponge cream into oven-safe bowls.
Sprinkle with brown sugar and small berries (optional). Put it in a moderate oven to bake until it forms a nice caramelized top. Serve once cooled.
