How to make
Preheat the oven to 360°F (180 °C) and lay out a tray with baking paper.
Stir together the flour, cocoa powder, baking soda, baking powder, salt and sugar. Beat the softened butter with the sugar until smooth and creamy, then add the egg.
Add the coffee (or milk) and then add the dry ingredients and stir until mixed. The amount of sugar is up to you - for sweeter cookies, add 1 ½ cups. Put the mixture in the refrigerator to set for 1 hour.
Then tear out small balls and arrange them on a tray with baking paper, with some space between one another. Optionally, gently press them with the bottom of a glass to form them. Put the cookies to bake for 9-11 minutes, open the oven door at the end of baking. Place the ready cookies to cool on a cooking grid.
To prepare the cream for sticking the cookies together, beat both fats at room temperature until they form a smooth cream. Then mix well with the powdered sugar for a few minutes and add the vanilla.
Put a little bit of cream on each cookie and stick them together in 2's, while pressing lightly.
