How to make
Braise the onion, carrot, mushrooms and rice in a pan for 10 min., add 1 cup water, salt and boil for another 5 min.
Stuff the rabbit with this filling and sew it closed. Grease its entire body well with oil and rub in paprika.
Pour on 1 cup water, 1 cup beer and stretch it out in the tray you intend to bake in. Wrap with foil and bake 3 hours at 430°F (220 °C).
5 min. before the 3rd hour is over, check to see if the meat comes off the bone. If it does, turn the stove off and after 5 min. take it out of the oven so it doesn't dry.
