How to make
Debone the pork shank, cut the meat into bites.
Clean the green beans, chop the pods in 2.
Dice the eggplants and potatoes into coarse cubes.
Chop the peppers and onions coarsely, the carrots into round slices.
Chop the chili peppers and celery finely, the garlic cloves into slices. Put everything, along with the spices, butter and bone of the shank in a suitable clay pot with a lid. Salt and stir.
Add 1/2 cup water. Bake at 320°F (160 °C) in the oven for 4 hours with the lid on.
