Clean and cut all the vegetables into medium-sized pieces. Heat a little oil and fry the chopped onion, coarsely chopped carrots (if small, leave them whole) and peppers.
Fry until browned and transfer to a tray, where you have already placed the pumpkin and potatoes.
Add the unpeeled garlic cloves and mix everything with the spices. Pour a little oil and put the dish to bake for 35-40 minutes with foil.
Afterwards, remove the foil and bake until lightly browned.
